Enable DDB in your kernel config and rebuild your kernel.  You may
also want to remove the drivers for unused hardware or at least
disable them.

DDB should give you a reason for the panic (you can see a trace of
where the machine was when it had the problem) although it's not
very good at appearing when X has the screen.
