I have installed harvest from the FreeBSD ports collection
and printed out the postscript manual and haven't
found anything about what I'm looking for...

As you know, the FreeBSD ports does not consist
of the broker, gatherer, .. There's only
   the object cache...

There is no Harvest port; there is only a port of the cache daemon.

Grab Harvest off the net and compile it -- it's not difficult.
