Here's some info I found from a variety of sources:

Try
        ftp.cs.vu.nl.

directory:
                
                /pub/minix/macintosh

id: root
password: Geheim   ( full root privs)

id: ast
password: Wachtwoood ( yes the three o's) ( users privs)

The person who posted said this worked, that is, he was able to log in.

Also try

ftp.cs.vu.nl:/pub/minix/1.7.1

Also, there is evidently a Mac version of Minix and MacMint, which are at
