And furthermore, I have tried adding a line to /etc/fstab and couldn't
get it to mount that way either.

What I did there was:

<hostname>:/<path> /mnt nfs rw,rsize=1024,wsize=1024,intr 0 0

Funnily enough, no mention of that shows up in the reboot messages.
Not as success or error.
