probably want something like

a) man -t printcap > printcap.ps 

OR

b) gunzip < /usr/share/man/man5/printcap.5.gz | groff -t -b -v -man -T ps >
printcap.ps

I know which one I prefer...
(b is closer to what you appear to be trying to do, a is what you REALLY
  want to do)
