How about the Amiga 3000, and other '030 Amigas. There are some really
cheap '030 cards for the Amiga 500 and there are about 3 million of them
out there...

Plus, they come with schematics and the hardware is really well documented.
And there's GCC for AmigaOS, and the RDB mechanism handles partitioning
nicely. You could even use Amiga UNIX for cross development.

And they read/write standard PC-format disks if you want to give up some
disk space. Good SCSI. High performance bus.
