Did you have 32-bit addressing turned on?  I mean, in MacOS Control
Panel?  The above sounds like the problem I just had last night, and
turning 32-bit addressing on helped my SE/30 boot in the single user
mode.

BTW, you can just type enter when it asks for the path to sh.
