The best available book I found so far is:

Understanding and Using COFF
O'Reilly & Associates, Inc.
ISBN 0-937175-31-5

The book also includes a basic program to view the contents of COFF files.
I don't know if the program is available via ftp somewhere, however, if you
want it I hacked it in from the book and made some improvements. If you
want it just send me an email.
